Both seem like I should be counting, but do I have to count them both? Or do I just count one or the other?

Try a calorie counter, it will give you all the information you need.

I think it depends entirely on what type of diet you are following. Some require that you count calories, others suggest you ignore calories all together and only pay attention to fat grams, and so forth. Each diet plan is set up differently, and should work accordingly with how you are supposed to measure your food intake.

You should watch your carbohydrate intake. Carbs can give you the needed calorie to burn as the energy for your daily work.

I think you should count both. Too much calories and carbs can add stored fat and that causes us to be obese.
