Can carrots actually help you see in the dark? Or is this a myth spun to me by my Grandad?

Indirectly speaking, yes. Not exactly like candle light or flash light, but since carrot is a good source of beta carotene (which is converted to Vitamin A in your body), and Vitamin C, it helps improve your eye sight. It's not a myth, actually.

The reason why your Grandad told you carrots will help you see in the dark is because, Carrots are rich in beta carotene / vitamin A and deficiency of Vitamin A causes night blindness. So, he sure wasn't spinning a myth.

Carrots are rich in beta carotene and vitamin A. Since vitamin A helps in better eyesight, your grand dad's idea must have been to drive home the point that eating carrots is good for eyesight.

You don't have to be Bugs Bunny to appreciate carrots. Personally, I prefer carrot juice than anything else carrot. Typically, I would juice 10 carrots + 2 oranges (sometimes apple).

A carrot is a food for fighting cancer. The beta carotene content of carrots helps fight cancer cells to build in our body and also prevent heart diseases.

We all know that it gives beta-carotene or vitamin A for our eyes. It also gives protein, riboflavin, niacin, Vitamin B6 and vitamin C.

It also gives protein for the muscles. Carrots alone can give you the proper mineral like riboflavin and vitamins like vitamin A.

Carrots are high in vitamins A and beta carotene. This was prescribed to my friend who is on her 5th month now of pregnancy.

Enough of the nutrients of carrots, here is a recipe you can do using carrots. I saw this on the food channel. It is called carrots in cheese sauce.
1 lb. carrots
1/2 lb. Velveeta cheese
1/4 tsp. salt
1 sm. onion, chopped
1/2 c. light cream
2 tbsp. butter
Cook carrots and onions until tender, about 20 minutes. Pour off excess water. Add cheese, cream, butter and salt. Simmer very carefully until blended or place in casserole and bake in slow oven until blended.
